This green condiment tastes surprisingly like avocado. I
have no idea how that’s possible, but it’s certainly lower fat than an avocado
treated in much the same way.
1 TBLSP lemon juice
1 green onion, chopped
¼ cup chopped zucchini
1 1/3 TBLSP tahini
¼ TBLSP olive oil
Pinch of ground coriander
Pinch of ground turmeric
Pinch of ground cumin
Salt and Pepper to taste
- In a food processor or blender, whirl the lemon juice and green onion until it’s tiny chunks.
- Add the zucchini and give it a few pulses.
- Add in the tahini, olive oil, and spices, and blend until smooth.
- Refrigerate for 20-30 minutes, and then smear on bread, crackers, chips, or celery stalks.
